At 17, at the age of 17, Bobby found his culinary identity as a chef in Joe Allen’s iconic theater district. His father, a partner in the restaurant, had negotiated the work. Joe Allen himself was so fascinated after a short time by Bobby’s abilities that he paid a training course to the French Culinary Institute for the young chef.

After graduating from Buds and Jams in 1984, Bobby first experienced the sweetheart of southwestern chemicals, together with restorer/owner Jonathan Waxman.
